St. Patrick’s cookies

As a member of my school’s Sunshine Committee, I wanted to give slices of Irish Soda Bread to my co-workers for St. Patrick’s Day, so I went in search of a recipe.  I found this recipe for Irish Soda Bread cookies and decided to make them instead.

P1070816webI looked in my collection of cookie cutters and actually found one shaped like a shamrock, so that’s what I used.  When I taste-tested a cookie, I realized it was, like Irish scones, a little dry, so I also included a bag of Irish Breakfast tea!
